A travel ready treat that tastes like chocolate fudge, is sweetened with dried fruit and is a cinch to make.
In the bowl of an 8 cup food processor combine: medjool dates, raw pecans, cocoa powder, vanilla extract and a pinch of salt.

Blend until the mixture looks like…well…pretty dirt that sticks together when pressed (see photo below).
Dump mixture into a large bowl and stir in chopped dried fruit and dark chocolate (optional).

Line a small dish with wax paper or parchment and add your beautiful dirt.
Cover with wax paper or parchment and press firmly.
Dark Chocolate Energy Bites
Ingredients:
- 1 cup raw pecans or walnuts
- 1 cup medjool dates or other soft dried fruit such as figs or apricots
- 4 tablespoons cocoa powder
- 1 tsp vanilla extract
- pinch of salt
- optional additions: dried cherries and chopped dark chocolate
Directions:
Measure all ingredients into an 8 cup food processor and blend until mixture looks like sand and holds shape when pressed.
Dump mixture into a bowl and mix in chopped dark chocolate and dried fruit, optional.
Press mixture into a lined dish and cut into 24 squares. Store in an airtight at room temperature for up to a week.
